A couple days ago, I went with some of Dan’s friends to his chocolate factory to sort out whatever personal stuff that he and friends had left there. To everyone’s surprise we found a batch of milk chocolate sitting in the tempering machine. This was Dan’s last batch of chocolate, and we knew we couldn’t let it go to waste. So even though it hadn’t been any part of our plan, we all set to work to finish it up and mold it into bars.
Join me for the first meeting in what I hope will become a vibrant community--a club devoted to the exploration of forgotten foods, the methods of preparing food, mostly by fermentation, that were part of the knowledge and culture of every generation up until our own.
A guest chef will prepare an n-course meal for guests. To reserve a spot, contact xyz. The dinner will include some beverages, but guests are encouraged to bring their favorite liquid refreshments. A menu will be posted in the coming weeks.
